The other night, I tried a new recipe. Often risky, but very rewarding. My husband deemed it one of his new favorites! I loved it, the kids loved it...or maybe it was just the fact that it had crumbled bacon on top that they loved. Either way, it was a share worthy recipe:
Creamy Chicken Chowder
Ingredients
3 1/2 C shredded chicken1 package bacon, diced and cooked
1 Tbsp Butter
1 1/2 Tbsp Oil
2 Medium Bell Peppers
6 Cloves Garlic, minced
1/3 C Flour
6 C Chicken Broth
3 Medium Russet Potatoes, diced into little cube
2 Bay Leaves
Salt and Pepper
2 C Frozen Corn
1 1/2 C Milk (2%)
Directions
Melt butter and in oil and cook pepper and garlic until tender.Stir in flour, constantly stirring. Add broth, whisking until all the flour is dissolved.
Add potatoes, bay leaves salt and pepper. Boil then simmer uncovered until potatoes are tender.
Add chicken, corn and milk. Simmer 15 minutes.
Serve with bacon crumbles on top.
