Breakfast Fest 2015 (Day 1 Recipes)


Thick Butter Bread

Note: Makes 2 loaves .

 

 

 

 






6-7 C. flour
1 1/2 Tbsp. yeast
2 C. milk
1/4 C. sugar
1/4 C. butter
2 tsp. salt
3 eggs

Mix 3 C. flour and yeast in bowl.
In a saucepan, mix milk, sugar, butter and salt until warm and butter is melted.
Add warmed mixture to flour and yeast.
Mix in 1 egg at a time.  Beat a few minutes, until smooth.
Add rest of flour until incorporated.
Knead for about 6 minutes.
Shape into ball and let rise in buttered bowl for 1 hour 15 minutes, until double.
Punch and divide in 2, cover and rest 10 minutes.
Place each in a greased bread pan.  Cover and let rise 35 minutes
Bake at 375 for 25 minutes.  Cover and bake 15 minutes more.
Let cool out of pan on wire rack.

Sky High Biscuits

Notes: Makes 12 biscuits.  Make in single batches only, no doubling.
 









2 C. flour
1 Tbsp. baking powder
2 tsp. sugar
1/2 tsp salt
1/2 C.butter (chilled)
3/4 C. milk

In a food processor, pulse flour, baking powder, sugar and salt until combined.
Add butter and process until "sandy"(see below)










Add milk and process just until it sticks together (see below)










Knead about 6 times unto a floured surface, folding in half and rotating 90 degrees each time.
Roll to 1/2 inch and cut out 12 biscuits.
Place the biscuits on a greased cookie sheet in refrigerator for 10 minutes.
Bake at 450 for 12 minutes or until golden brown.
